Ballakelly Sirloin Steak Sandwich with Mustard Mayo & Caramelised Red Onion
Butter or oil the meat, not the pan. Use a heavy non-stick griddle if possible – a standard frying pan will do otherwise. Get the pan very hot, place the meat and leave it for two and a half minutes for Medium. Flip for another two and a half minutes. Rest for at least 5 minutes.
Tip: Don’t move the meat once you’ve placed it. This makes for the most even cooking.
Slow Cooker Madras with Ballakelly Mutton Neck
Season and brown your meat of choice – any cut of lamb or mutton will work well – and set aside. Cook chopped onions and garlic until they soften, then add a spice blend of your choice, or half a jar of curry paste. Cook out for a further four or five minutes, then add coconut milk and chopped tomatoes. Bring to boil then simmer for around quarter of an hour. Add the browned meat and the sauce to a slow cooker or dutch oven and cook for five hours on high, or eight hours on low. The meat should fall away from any bones.
